Electric Unicorn Breakfast Cake 

1. Start by making a strong cup of coffee with 1/2 cup boiling water and 3 Tbsp ground Electric Unicorn Coffee, allow to cool and set aside 

2. Make your cereal cakes 

Ingredients

1/2 cup butter, at room temperature 

1 cup granulated sugar

1/2 tsp vanilla 

2 large eggs, at room temperature 

1 1/14 cups all-purpose flour

1/2 cup cereal, broken up gently with your fingers 

1/4 cup sprinkles of choice 

1/2 tsp baking powder

1/2 tsp baking soda 

1/4 tsp salt

1/2 cup + 2 Tbsp buttermilk

1/4 cup strong coffee (see step 1) 

 

Preheat oven to 350’F. In a mixer set at medium speed, whip butter and sugar until light and fluffy. Scrape down sides of bowl. Add vanilla and eggs, one at time, scrape down sides again. In a separate bowl, whisk together your flour, cereal, sprinkles, baking powder, baking soda and salt. In another bowl, mix together coffee and buttermilk. Alternate wet and dry ingredients in to butter mixture at low speed, starting with dry and ending with dry. Divide cake batter amongst 4 x 4” greased and parchment lined cake pans (or use pan size of your choice, adjusting bake time accordingly). Bake for 20-30 minutes or until baked through and knife inserted in centre of cake comes out clean. Allow cakes to cool 10-15 minutes, remove from pans, allow to cool completely, trim off top of cakes to create even layers. 

 

3. Make your Cereal Milk Buttercream

Start by soaking 1 cup cereal in 1/2 cup milk, allow to sit for 15 minutes and strain, set aside. 

Ingredients: 

1/2 cup butter, room temperature 

2-3 cups icing sugar 

Cereal milk (see above)

Vanilla to taste 

Salt to taste 

Extra cereal 

In a mixer at medium speed, whip your butter, reduce speed and slowly add in icing sugar, 1 cup at a time, setting aside 1 cup. Add cereal milk, vanilla and salt and adjust with remaining icing sugar if needed until buttercream is thick but not too thick, and easy to spread. Add desired amount of cereal, stir to combine.
