The real point of a dark roast is to shift the flavor profile from the bean itself to the roasting process. As the beans roast longer, their bright, fruity, and sharp organic acids break down, resulting in a much smoother, low-acid brew.
This extended heat caramelizes the natural sugars and introduces a completely different wheel of bold flavors, such as dark chocolate, molasses, and smoky undertones. Additionally, darker roasts develop rich oils that migrate to the surface of the bean; when brewed, these oils give the coffee a heavier, more velvety mouthfeel that easily cuts through milk and sweeteners without losing its distinct coffee identity.
